  • 4 Boneless, Skinless Chicken Breasts Halves
  • 4 teaspoon of olive oil
  • 4 tablespoon of Rico’s Chipotle


Salad

  • 1 cup sliced bell peppers (any color combo)
  • 1 cup diced pico de gallo
  • 1 cup of canned corn
  • 1 cup of canned black beans
  • 2 cups chopped Romaine lettuce
  • 1/2 cup white rice (Optional)


Toppings

  • 2 scallions chopped
  • small bunch of cilantro chopped
  • ½ cup guacamole (Optional)
  • ½ cup sour cream (Optional)
